Peanut Butter Chocolate Chip Banana Muffins (gluten free)

This recipe is hands down my most favorite muffin recipe yet! 🤤

RECIPE: (Makes 12 muffins)

•1 cup mashed ripe bananas

•3/4 cup natural creamy peanut butter

•2 large eggs (flax eggs will work too!)

•1/4 cup pure maple syrup

•2 tsp vanilla extract

•1/2 Tbsp dairy free milk of choice (more if needed)

•1 cup oat flour

•1 tsp baking powder

•1/2 tsp cinnamon

•1/4 tsp sea salt

•1/3 cup chocolate chips


DIRECTIONS:

1. Preheat oven to 350 degrees and place muffin liners into muffin pan. Spray each liner with cooking spray.

2. In large bowl, mash the banana and mix all wet ingredients together.

3. In separate bowl, mix all dry ingredients together, including chocolate chips.

4. Fold the flour into the wet ingredients. Make sure to not over mix!

5. Bake 18-20 mins until a toothpick comes out clean. Transfer to wire rack to cool.
